Eric was supposed to be on the show but they told him when he got there that he couldn't. He was mentioned as the one that developed the gluten free recipes. Here it the video if you want to see it.

"Everyday with Libby"

Tomorrow is the day Eric is on TV! He will be doing a demo on "Everyday with Libby" at 4PM on Wednesday. For those that read our blog that are not in Colorado you can view it on Fox 31 live feed on there website. If you can't do either we are planning on recording it and we will post it here!

Eric's Tooth

On Thursday Eric ended up with an infected tooth. He went to the dentist to find out that he needed a root canal but her has curved roots and had to go see a specialist. (Which he could only get a hold of one and could only get him in on the 21st!)Eric got a blessing on Friday night. The dentist gave him 3 prescriptions which ended up not helping with the pain at all. He went back on Saturday because the pain was so bad. He tried to make Eric feel nothing and after 3.5 shots he still felt everything. The dentist gave him 2 more prescriptions, the strongest he could prescribe. They worked a little better but not much. This is what Eric's face looked like on Saturday night...poor guy. He got much bigger after that but then about 1AM the antibiotics finally started to kick in.


Eric got his root canal today and has to go back to see the specialist in 3 weeks because they just filled his roots with medication and plan on finishing it then.

And in the middle of all of this we found out Eric being on TV has been moved to the 19th. It will be on Fox 31 at 4PM "Everyday with Libby"!

Great News!

Eric answered the phone at Bakery and it was Fox 31 wanting to come and do some video in the bakery then have Eric come to a gluten free cooking demo. They plan on airing it the second week of January! When we find out more we will let you know!

Aiden's Reaction to Christmas


Santa brought Aiden a Buzz Light-year action figure and Lily a pink little people bus. We thought Aiden would have gone crazy for Buzz but he ended up playing with Lily's present. Enjoy!

Mermaids Bakery

Eric has been doing his co-op (internship) at Mermaids Bakery for the past month and there are some good things coming out of it! He has been teaching the owner about gluten-free baking and he changed her original recipes into gluten-free ones! The own has been interesting in gluten-free for awhile now because so many people have came into her bakery asking if they did it and now she just launched her new website!

Here is the website and if you click on the "Introducing Mermaids Gluten-free cakes and cupcakes" it will take you to more information about it. And that was where we found a really nice sentence about Eric! I had to keep reading it until it sunk in because it is true!

"We brought in an award winning gluten-free pastry chef, and tested dozens of original recipes until the cakes were so good, and so moist, that it is comparable if not better than our original flour recipe!"

Eric brought home a piece of chocolate cake for me to try and I could not stop eating it. It was the best tasting cake he has ever made!

The owner and Eric are now working on making cake mixes to market and put into Whole Foods.....we will see what happens!


(Gluten-free is taking wheat out of the recipe and replacing it with other flours...any nut or bean can be a flour. Eric just had to find a balance of different flours that would react well with the other ingredients.)

Pumpkin Patch- Late I know!

The Friday before Halloween we went to the pumpkin patch with Eric's aunt, uncle and cousins and here are the cute pictures they got of the kids.
